Simple Cheesecake 8 oz. cream cheese, softened 3 eggs, separated 3/4 cup sugar 1 tsp. vanilla extract 9" crumb crust Beat egg whites until stiff, but not dry. Cream together cream cheese, egg yolks, sugar, and vanilla extract until light and fluffy. Gently fold beaten egg whites into cream cheese mixture. Pour into the crumb crust. Bake at 350 degrees until set, 30-35 minutes.
Refrigerate until completely chilled before serving. Good with or without fruit topping.
