Chess Pie 6 egg yolks 1 cup granulated sugar 1 tablespoon corn meal 1 tablespoon flour 1/2 teaspoon salt 1/2 cup unsalted butter, melted 1/2 cup evaporated milk, or coffee cream 1 tablespoon pure vanilla extract sprinkle of nutmeg 1 unbaked 8" pie shell Preheat oven to 400 degrees F. Combine egg yolks, sugar, corn meal, flour, and salt in medium mixing bowl, stirring well with fork. Gradually stir in melted butter, then evaporated milk or cream, then vanilla extract. Filling should be creamy and smooth. Do not beat mixture, as it will form too many bubbles. Pour filling into pie shell and place on bottom rack of oven. Immediately reduce heat to 350 degrees F. Bake 45-60 minutes, or until silver knife comes out clean when inserted in filling. Serve slightly warm or at room temperature.
