Date and Yoghurt Pie
3/4 cup oats 1/4 cup flour 1/2 cup coconut 1/4 cup raw sugar 100 g melted butter
3/4 cup dates (stoned and chopped)
350g cream cheese 1 teaspoon vanilla 2 tablespoon melted honey (or 2 tablespoon sugar) 2 cup plain unsweetened yoghurt 1 tablespoon gelatine
Mix oats, flour, coconut, sugar and butter together. Press into 9-inch pie dish. Bake for 12-15 minutes at 350 degrees F (180 degrees C) until brown.
Simmer dates in 1/2 cup of water until absorbed (about 15 minutes) and allow to cool. Mix cream cheese, vanilla, honey and yoghurt. Dissolve gelatine in 1/2 cup of boiling water. Mix gelatine into cream cheese mix. Mix in dates. Test and add more sugar if too sour. Pour into crust put in refrigerator and allow to set (about 1-2 hours)
