Dutch Apple Pie

Dough
125 grams/ 4 oz selfraising flour (or flour and baking powder)
125 grams/ 4 oz flour
125 grams/ 4 oz castor (fine granulated) sugar
1 egg yolk
some lemon rind
pinch of salt
Filling
500 grams/ 1 lb cooking apples, peeled and chopped up
50 grams/ 2 oz sugar
cinnamon
some raisins
- Preheat oven to 170 C/ 325 F
- Grease the baking tin - preferably a round springform one
- Prepare the apples, peel and chop and sprinkle with sugar and cinnamon, add the raisins and set aside
- Mix all the ingredients for the dough, knead into a ball. Roll the dough to cover the bottom and sides of your tin. Leave some dough to decorate the pie with
- Fill tin with apple mixture and decorate with the remaining dough
- Put in the oven for 50 minutes until golden brown
If cooking apples are not available in your country, pour a mixture of:
Juice of one lemon, 1 egg, 2 tablespoons of custard powder, 75 grams/ 3 oz sugar over all the apples before putting the pie in the oven. This will provide a softer, juicier base
