FRESH FRUIT COBBLER
2/3 to 1 cup sugar 1 Tbsp cornstarch 1 cup boiling water 3 cups fruit with juice 1/2 Tbsp. butter 1/2 tsp. cinnamon
Mix together in saucepan sugar and cornstarch. Stir in gradually the boiling water. Bring to boil. Boil 1 minute, stirring constantly, then add fruit and juice.
Pour into 10x6x2" baking dish. Dot with butter. Sprinkle with cinnamon.
Drop spoonfuls of shortcake dough onto fruit. Bake. Serve warm with ice cream.
Shortcake dough
1 cup flour 1 Tbsp. sugar 1 1/2 tsp baking powder 1/2 tsp salt (or less) 3 Tbsp. shortening 1/2 cup milk
Mix together flour, sugar, baking powder, and salt. Finely cut in shortening with pastry blender or fingers. Stir in milk to make soft dough.
Variation:
Peach or Apricot cobbler: use 1 cup sugar.
Blackberry or Boysenberry cobbler: use 3/4 cup sugar.
