Dream Peach Pie
basic pie crust for single crusts 1 cup sugar 6 tablespoons cornstarch 2 cups mashed fresh peaches 1 cup water 1 package (3 oz.) cream cheese, softened 1/4 cup powdered sugar 3/4 cup frozen whipped topping, thawed 1 cup peeled sliced fresh peaches whipped cream, optional
Prepare and bake pie crust in a 9 inch pie pan.
In a heavy saucepan, stir together sugar and cornstarch. Stir in mashed peaches and water. Cook over medium heat, stirring constantly, until the mixture comes to a boil and begins to thicken. Reduce the heat to low and simmer, stirring constantly, 1 minute. Cool mixture while making the rest of the filling.
In a medium bowl, beat the cream cheese and powdered sugar with an electric mixer until fluffy. Fold in whipped topping.
Spread cream cheese mixture in cooled pie shell. Arrange fresh peach slices over the cream cheese mixture. Spoon on cooled peach mixture. Refrigerate 3 hours or longer, serve with whipped cream, if desired. Makes 1 9-inch pie, 8 servings.
