Deep Dish Pear Pie 1 1/2 cups all-purpose flour 1/2 tsp salt 1/4 cup shortening (I use a stick (1/2 cup) of butter) ice water With pastry blender cut shortening into flour and salt mixture until resembles cornmeal, add about 1/3 cup ice water and stir to mix well with fork, adding water just until dough adheres into a ball & follows fork around bowl. Handling dough as little as possible divide into two parts, one slightly larger than the second, and roll out on floured board thin enough to line pie dish.
3-4 large pears cored, pared and sliced 1/4 cup sugar 1/4 tsp nutmeg 1/4 tsp cinnamon dash of cloves dabs of butter
Fill with pears cored, pared and sliced, layering alternately with sugar plus 1/4 tsp each nutmeg & cinnamon and a dash of cloves and dabs of butter over top. Top with rolled out remaining crust, pierce with fork or knife pricks to let steam out and bake in 350 F preheated oven 30-45 minutes, until crust is golden brown.
