Pineapple Pie
pastry for 2 crust pie 3 cups fresh pineapple, shredded or cut into small pieces 2 large eggs 1-1/2 cups sugar or to taste 2 Tb. flour 2 tsp. grated lemon rind 1 Tb. lemon juice 1 Tb. butter Combine eggs, sugar, flour, lemon rind, and lemon juice and beat thoroughly. Add pineapple and blend in. Turn into pan, dot with butter, and cover with top crust. Cut vents in crust, sprinkle with sugar, and bake at 450 for 10 min, then at 350 for about 30 minutes more, until filling is beginning to bubble up through vents in crust.
