Rhubarb Cobbler 02

Rhubarb Cobbler
3 cups rhubarb 1 cup sugar 1/4 cup butter butter
1 egg 1 cup sugar 1/2 cup shortening 1/2 cup evaporated milk 1 cup flour 1 tsp. baking soda
Cut rhubarb into bite-sized pieces and toss with sugar in a mixing bowl. In a lightly greased rectangular baking dish (next size smaller than a 13x9x2), pour rhubarb/sugar mixture and dot with
Cream shortening and sugar together. Add egg and beat until fluffy. Add evaporated milk and beat until smooth. Sift flour with baking soda Add to milk mixture and beat until smooth.
Pour over rhubarb. Bake 50-60 minutes at 350 degrees F. until golden on top. Serves 8
