Shoofly Pie
1 unbaked 9 in. pie shell
1/2 Tbsp baking soda dissolved in 3/4 cup boiling water, cooled 1/2 cup molasses 1 egg yolk, beaten well
3/4 cup flour 1/2 tsp cinnamon 1/8 tsp nutmeg 1/8 tsp ginger 1/8 tsp cloves 1/2 cup brown sugar 1/2 tsp salt 2 Tbsp butter (margarine or crisco)
Combine the soda, molassesa and egg yolk. Be sure the soda water is not too hot.
Combine remaining ingredients except for the butter. Mix well and then stir in the butter using a fork. Work until it is a crumb consistency.
Put 1/3 of the crumb mixture in the bottom of a pie shell. Pour on 1/2 of the liquid mixture. Top with 1/3 of the crumb mix. Add remaining 1/2 of the liquid mix and then finally, top with the remaining crumb mix.
Bake at 400 degrees F for 10 min., then reduce oven temperature to 325 F and bake until center is firm so that a knife comes out cleanly when tested in the center (about 30 min at 325).
