2 eggs 1/2 cup sugar 1/4 tsp salt 1 tsp cinnamon 1/2 tsp ginger 1 cup sweet potato 1 cup heavy cream
Boil sweet potatoes, peel, and mash well before measuring. Beat eggs slightly, add other ingredients and mix well. Pour into unbaked 9" crust, bake 400 F 10 minutes, then lower heat to 350 F and bake 40 minutes longer.
