sugar only, some with maple syrup only, and some with a combination.
1) the simplest one: Brown sugar only
1/3 cup cream 1 Tbsp butter 1 cup sugar
Mix all ingredients together and add to pie crust. Bake until crust is golden to taste.
2) another version:
2 cups brown sugar 6 tbsp of flour 1 1/4 cups milk 4 tbsp butter
Mix sugar and flour well. Add to milk and boil 3 minutes. Remove from heat and butter. Mix well then let cool. Add to pie crust and bake at 450 for 25-30 minutes.
3) Maple syrup:
1 cup milk 1/4 cup flour 1/8 tsp salt 2 cups maple syrup (the real stuff) 2 egg yolks 1 tbsp butter
Mix flour, salt, and syrup. Add to hot milk (not boiling, just hot). Cook until thickens, stirring constantly. Add 3 tbsp of this to yolks (to warm up yolks). Add above to hot mixture and cook another 3-4 minutes. Remove from heat and add butter. Let cool and add to pie crust.
