Zucchini Apple Pie
4 or 5 large zucchini 7 to 9 inches long peeled, cut lengthwise and seed.
3/4 cup sugar
1/8 cup flour
1 tablespoon apple pie spice
2 tsp cinnamon
1 tsp nutmeg
1/4 tsp cloves
1 pie crust
Cut the zucchini into slices. The zucchinis need to be large but
still tender. Peel and take the seed area out. Cut in half lengthwise
and slice like apples. They even look like apple slices if the
zucchini is the right size. Put in a large bowl and toss with flour
and apple pie spices and sugar just like an apple pie. Put into
pie crust and cover with crust. Bake and 375 until the crust is
golden and the filling is very bubbly.
