Pizza Dough

1 c water
2 1/2 ts yeast
pinch sugar
2 c flour
1/2 ts salt
3 tb olive Oil

Mix the warm water together with a bit of sugar to start the yeast;
let sit for 10 minutes to proof. Then add oil and the salt. Mix
in the flour and turn onto a floured surface. Knead briefly (1
minute maximum) to just get the dough to an even consistency. Put
into an oiled bowl, covered with a damp towel, and leave in a warm
spot to rise until doubled in bulk.

Punch down, knead briefly, to get it into the right shape to spread,
then place it onto the floured cooking surface, and spread by hand.
Let the dough rest for a few minutes when it stops stretching.
Continue to stretch the dough to the right size. Do not use a
rolling pin.
