FOCCACIA

30 g / 1 oz fresh yeast
1/2 tsp sugar
220 ml / 8 fl oz warm water
1 tsp sea salt
450 g / 1 lb strong white bread flour
4 tblsp olive oil

extra virgin olive oil
coarse ground salt

Mix the yeast and sugar into a cream and then mix into the water.
Mix the salt with the flour, add oil yeast and water and mix
together. Knead on a floured surface until smooth. Return to
bowl, cover and leave to rise in a warm place until doubled in
size.

Heat oven to 200C/400F gas 6.

Knock back the dough and knead lightly. Roll out to about 2cm/
3/4in and place in a well oiled tin (approx 12x8 ins). Allow to
rise again.

With the handle of a wodden spoon make deep depressions in the
dough about two inches apart. Drizzle on about 2 tblsp of the oil
and scatter the coarse salt over the surface.

Bake for about 20-30 minutes.
