FRUIT PIZZA
2 c. Bisquick 1/4 c. sugar 1/4 c. margarine 3 oz. cream cheese 1/4 c. sugar 1 t. vanilla 1/2 t. almond extract (opt.) 1 c. chilled whipping cream Fresh fruit: strawberries, bing cherries, apricots green grapes, peaches, kiwi, blueberries (frozen will work, but drain) 1/2 c. apple or apricot jelly
Heat oven to 375. Mix Bisquick and 1/4 c. sugar. Cut in shortening until crumbly. Press firmly and evenly on bottom and up sides of lightly greased 12" pizza pan or fluted quiche pan. Bake until light brown, 8-10 minutes (burns easily, watch after 7 minutes). Cool.
Beat cream cheese, 1/4 c. sugar, vanilla and almond extract in small bowl an low until smooth. Add whipping cream, beat on medium speed until stiff peaks form. Spread over crust. Arrange fruits over cream mixture.
Heat jelly over low heat until melted and pour over fruit. Chill at least 2 hours. Serves 12.

This recipe is delicious. It is relatively easy to make and looks pretty with the fruit arranged in a pinwheel.
Just make sure that the fruit is very dry before you put it on the pizza. After washing or draining it, I left the fruit on paper towels for about 1 - 2 hours. Otherwise the juices run all over the cream cheese layer and the crust gets soggy.
