Potato, Onion and Goat's Cheese Sicilian Pizza
1/2 ounce fresh yeast 1/2 teaspoon sugar 8 oz strong plain flour 2 tablespoons olive oil 4 oz warm water salt
3 medium sized onions, thinly sliced 3 medium sized potatoes, extremely thinly sliced 1/4 pound goats cheese, cubed garlic rosemary extra virgin olive oil black olives, stoned and quartered butter salt and black pepper
Dissolve the yeast and sugar in 2 to 3 tablespoons of warm water. When fully dissolved put aside in a warm place for approx. 10 minutes until the mixture has started to froth.
Put the flour and salt into a bowl and add the yeast mixture when it is ready, also add the oil and warm water and combine into a moist but firm dough. When it is a dough, turn out onto a floured surface and gently knead. When done place in a clean, floured bowl, place a damp cloth over and set aside to rise for an hour and a half to two hours until doubled in size. Whilst the dough is rising fry the onions and about 3 cloves of garlic in a little butter and olive oil, until the onions are soft and golden. Once ready put aside. Also boil the potato slices for approximately 4 minutes or until semi-cooked, then drain and put in cold water.
Preheat oven to 220C.
When the dough has risen, knock it back and lightly knead until springy, spread out on a baking sheet into approximately 10 inch square. Spread the onions and garlic over the base, place some rosemary on the onions, then place the potato slices in a single layer over the onions. Add more sprigs of rosemary, olives and quarters of garlic. Also place the cheese over, then sprinkle with olive oil, season. Bake for 30 minutes and serve hot.
