Babka

1/2 cup soft butter
4 egg yolks
1 tsp lemon juice
1 tsp salt
1 cup golden raisins
1 tsp vanilla extract
1/2 cup sugar
1/4 cup water
1 pack dry yeast
1 cup milk, scalded

1/4 lb. margarine or shortening
1 cup sugar
1 egg
2 tblsp milk
1 cup flour

Cream the butter and sugar until all the sugar is dissolved. Beat
the egg yolks in a separate bowl until they thicken. Mix the yeast
in 1/4 cup of warm water with 1/2 teaspoon of sugar. When this
thickens add to the egg mixture with the lemon, vanilla and salt.

Cool the milk and combine with the egg mixture and the creamed
butter and sugar. Begin adding flour until a soft dough is formed.
Now stir in the raisins until they are distributed evenly through
the dough. Knead the dough until it is no longer sticky.

Cover the dough and allow it to rise in a warm place until it
doubles in bulk. This normally takes about 2 hours. Next, butter
a 3 quart pan and shape the dough into it. Allow the dough to rise
again for about 1 1/2 hours.

Prepare the topping by creaming the sugar and margarine then mixing
in the egg, milk and finally the flour. Coat the top of the dough
with this topping and place in a preheated oven at 350 degrees for
30 minutes.

For an extra special treat sprinkle crushed almonds on the topping
before baking.
