BEETS WITH CREAM

1 pound beets
few drops of lemon juice
1 tablespoon flour
1 C sour cream
2 tablespoons water
2 tablespoons sugar

Cook the beets in boiling water until tender (45 minutes to 1 1/2
hours, depending on size). Drain, then peel and slice. Place in a
serving dish. Sprinkle with lemon juice. Mix the flour with the
sour cream and water in a saucepan. Bring to boil, stirring well.
Add sugar and salt to taste. Pour over the beets and mix together
gently. Serve with roast meat or poultry.
