CREPES - NALESNIKI

1 egg
1 egg yolk
1 1/2 cups of milk
2 cups of flour
oil for frying

1 cup curd cheese
1 Tbs. butter
1 egg yolk
1 tsp. superfine sugar

Whisk the egg and egg yolk together. Pour in half the milk and
whisk again. Mix the flour and the remaining milk. Beat well until
batter is smooth. Add a pinch of salt. Leave it for 5 minutes. Heat
oil in a pan, pour a little of the batter onto it. Tilt the pan so
that the batter runs to fill it and forms a very thin pancake. When
browned, turn on the other side. Fill the pancakes with cheese,
roll them, or fold into quarters and serve warm.

For the filling: press curd cheese through a sieve. Cream butter
with egg yolk and mix with the cheese. Add sugar.
