Duck Blood Soup
10 dkg dried fruit (plums, apples)
1 TBS 3% vinegar
25 dkg mixed vegetables for soup (carrots, parsley root, celery root)
1 bay leaf
1 3/4 L water
salt, sugar, lemon juice to taste
Soak and boil dried fruit. Mix blood with 1 TBS of vinegar, so it
would no coagulate. Cook duck's giblets with vegetables and spices.
Pour through sieve, add blood, boil constantly stirring, and sliced
vegetables. Add salt, sugar, and lemon juice to taste. Add cooked
(and probably sliced) fruits, sliced duck's giblets into the soup.
