Fresh Cheese 01

Traditional Easter Cheese (syrek, hurka or chrudka)
1 quart milk 1 dozen beaten eggs 1/4 tsp salt 1Tbsp sugar 1/4 cup white raisins (optional)
Have clean cheese cloth set in a strainer ready.
Bring the milk to a boil in a double boiler. Add beaten eggs, salt and sugar slowly to the mik. Mix and stir. Keep at simmering temperature and stir constantly till mixture turns to scrambled egg texture and milk is turned to water-like color. Add raisins if desired. Pour into cloth on strainer. Tie the ends of the cloth and hang on a line over a bowl..the liquid will slowly drip off. This takes a couple of hours. Remove carefully from the cloth and slice and serve.
Serve with horseradish.
