Karma (stuffed cabbage)
1 large head cabbage 1 pound ground beef and pork mixture 1/3 cup uncooked rice 1 1/2 Tbsp salt dash of pepper 1 onion, chopped & sauteed sprigs of chopped parsley 2 eggs 2 Tbsp shortening 1 large onion, sliced thin 1 large can sauerkraut 2 cups canned tomatoes
Combine ground beef & pork, rice, eggs, salt, pepper, sauteed onion and parsley. Soften cabbage leaves in boiling water. Put 2 Tbsp combined hamburger mixture in each leaf. Wrap tightly and fasten together, either with toothpicks or fold the edges and push one side throught the middle of the roll. Put these rolls on top of sauerkraut in the following order: In large pot, brown sliced onion slightly in shortening, add 1/2 the kraut (that has been washed & drained). Add 1/2 of the tomatoes. Place stuffed cabbage on top of this in layers. Cover with the rest of kraut and tomatoes. Chop the remainder of the cabbage leaves and lay on top of tomatoes. Add water to cover, put lid on and bring to boil. Cook slowly for 1 1/2 - 2 hours.
