LITTLE HOOFS (Kopytka)

5 potatoes, cooked and mashed
1 egg
flour

Mix the potatoes with the egg and add flour until you have a loose
dough that does not stick to your fingers. Roll out the dough on
a floured board and cut into thin noodle strips. Bring some salted
water to boil and drop the noodles into it. They are ready when
they float to the surface. Serves 6.

As I remember Kopytka growing up it was served with Bacon.Try useing thick cut Bacon,Dice it fry till crisp Remove all Bacon from pan and all but 2 TBSP.of drippings,Add Kopytka to pan and heat thru return Bacon to pan and toss(you can add onion if you wish)

Recipe as is - not really a splendor to the taste buds - though good. Try making a sauce of one onion diced finely and fried in butter. Spread this sauce over kopytka - manifique!!
