HERRING IN SOUR CREAM

Drain a jar of marinated herring, discarding onions and spices.
Cut herring into 1-1 1/2" serving sizes. Plunge them into a large
pot with cold water and keep them in it several minutes. Arrange
pieces of herring on serving dish. Drizzle with juice of 1 small
lemon. Slice two small onions and place on the herring. Fork blend
1/2 - 1 cups sour cream, 1 tsp sugar and 1 TBS brown prepared
mustard. Pour over herring. Cover with plastic wrap and refrigerate
overnight.
