Pickled Herring

2 lbs. salt herring
2 cups water
1/3 cup cider vinegar
1 med. oinion, sliced into rings
1/4 cup granulated sugar
1 tsp mustard seed

Skin herring, remove backbone. Cut fish into 1- to 2-inch pieces.
Soak fish in cold water overnight to remove salt. Next moring
drain water from fish, rinse fish in cold water. Combine remaining
ingreds, pour over herring. Marinate fish over night in refrigerator.
Serve chilled
