Pierok/pierog

dough for a two-crust pie

6 c. cooked buckwheat
2-3 c. cooked farmer's cheese
1 c plain mashed potatoes

2 eggs
1/2 c. browned salt pork nuggets or 1/2 c. crumbled bacon
2-3 T. drippings.

Combine buckwheat, cheese and potatoes. Add eggs, salt pork or
bled bacon and drippings. Mix.

Line a pie pan with the dough. Add filling. Cover with top crust,
crimp.

Make slashes and prick top with fork so steam can escape. Bake
400 deg. F oven for about 1 hour or until crust is nicely brown.
