LAZY PIEROGI / LENIWE PIEROGI

1 pound farmers cheese
3 eggs, separated
5 oz flour, more or less
1 TB of butter

Grind cheese. Mix butter with egg yokes until smooth, add`cheese,
mix until well blended and smooth. Mix egg whites until stiff and
add to cheese mixture. Add flour, mix well, add salt to taste.
Place cheese mixture on a flat surface sprinkled with flour and
form a long roll. Flatten it a little and cut diagonally in about
1inch width. Boil water, add a part of pierogi to the boiling
water, wait until they come up to the surface and then scoop them
up.
