Leniwe Pierogi
Take a half or a whole (about 3 lbs) farmers cheese. Scoop out about an equal amount of flour. If you used a 1/2 cheese, add one egg slightly beaten, if a whole, then use two. Have some warm water on hand in a glass to moisten the mix as needed. Mix together the cheese, flour and egg, and knead almost like a bread to mix well. Roll into a roll. Get a pot of water boiling. Cut pieces off the roll, and on a floured surface, roll out flat like you would a pie crust. Cut into 1 X 1 inch pieces and drop them into the boiling water. When they rise to the surface, scoop them out and put in a dish with melted butter.
