Poppyseed Waffles

WAFERS WITH POPPY SEED
Pour 2 cups of boiling milk over a cup of poppy seed and cook over low heat for 15-20 minutes. Drain thoroughly, then put the poppy seed through a meat grinder three times. Combine the ground poppy seed with 2/3 cup liquid honey, add 1/2 crushed vanilla bean, 4 oz raisins soaked in rum or cognac and 4 oz blanched minced almonds. (You can add some cognac or rum to the paste itself). If the poppy seed paste is too thick, it can be thinned out with a small amount of sweet cream. Cool the poppy seed paste in the refrigerator. Just before serving, place it in a salad bowl and spike densely with the waffles.
To make waffles, Knead a thick dough from 5 oz flour, 5 oz castor sugar And 1 whole egg. Cut narrow 1x4" rectangles from the Thinly rolled dough and bake in an oven, on a greased cookie sheet, to a light golden brown.
