Walnut Rugelach Makes: 3 dozen 1 1/4 cups flour 1/4 teaspoon baking powder 1/4 teaspoon salt 3 Tablespoons unsalted butter 3 ounces cream cheese 1/4 Cup sugar 1 egg yolk 1/2 teaspoon vanilla extract Filling 1 egg white 1 Cup ground walnuts 1/2 Cup sugar powdered sugar for dusting Mix flour, baking powder and salt together. Beat butter, cream cheese and sugar till creamy. Beat in egg yolk and vanilla. Stir in flour mixture. Divide dough into thirds; shape each into disk; wrap each in plastic wrap. Refrigerate till well chilled. Heat oven to 350F.
Beat egg white in a small bowl till frothy. Mix in walnuts and sugar.
Roll each disk to 6 1/2 - 7 inch circle. Spread 1/3 of filling on each circle, leaving 1/4 inch border around the edge. Cut each circle into 12 wedges. Roll up each wedge from edge to point in center. Place, point side down, on ungreased baking sheets. Bake for 12-14 minutes till lightly browned. Cool on racks. Dust with powdered sugar.
