Vegetable Salad

1 bag frozen peas and carrots (or canned)
5 medium firm potatoes
1 large dill pickle
2 apples - optional
2 stalks celery - optional
1 cup mayonnaise
1 cup sour cream
1 tsp mustard
5 hard boiled eggs, optional

Cook potatoes with the skin and peel it. Cook frozen vegetables not too soft. Do not cook if you are using canned vegetables. While veggies cook, chop celery and pickle very fine, mix into mayo and cream. Chop apples into dressing. When vegetables are cooked, dice potatoes into tiny squares the size of the carrots in the pea-carrot mixture. Add chopped eggs at this point if a more hearty salad is desired. Toss together with dressing. Chill.

You can add chopped onion or leeks if desired.
