ZUR / WHITE BORSCH
Mix coarsely ground rye and water in a stoneware crock to which you add some sugar and salt, and some garlic. On top of this, place a piece of rye bread which would assist in the fermenting process. Cover with piece of cloth, and place in a warm area.
To make soup: boil a pot of water, add a cup of the fermented zur and whatever is available, such as mushrooms, chopped onions, and a pinch of herbs. Pour it over the plain, boiled potatoes.
