Apricot Roasted Pork With Gravy
4 lb. Boneless Pork Shoulder Roast (trimmed of excess fat)
1 Pkg. Knorr's Dry mushroom soup
1 (213 ml.) jar of Apricot baby food
1 3/4 cup of water
Garlic Powder
Coarse Black Pepper
Place roast in covered roaster sprayed with Pam. Use a CorningWare or Clay roaster (they work better). Season roast with garlic powder and pepper. In a medium bowl whisk together water, soup, and apricots. Drizzle Apricot/soup mixture over pork roast. Cover with lid. Bake in preheated 325 degree oven for 3 hours. Baste every hour with apricot gravy. Roast with lid on. Gravy will thicken during roasting process (no need to thicken at end). Once roast is done transfer to cutting board, tent with foil for 10-15 min. before cutting. Keep gravy warm in oven covered until ready to serve. Very easy, very moist and very tasty!!!!!
Serve with mashed potatoes and a green vegetable.

I noticed one of the reader's was confused as to what 'Pam 'was, it is non stick cooking spray, not nessesary but makes clean up alot easier. The aroma of this cooking is amazing.
