Pork with Apricot Glaze

500g pork fillets
60g butter
1 onion, sliced
2 tsp curry powder
2 tsp grated ginger
2 Tbsp apricot jam
2 Tbsp soy sauce
1 Tbsp lemon juice

Melt butter in a pan, add onion, curry powder, ginger, jam, soy
sauce and lemon juice, Stir over low heat until the jam has melted.
Place pork in a greased shallow ovenproof casserole in a single
layer, pour sauce over, bake uncovered in a moderate oven about 25
minutes or until pork is tender.
