Brown two thick centercut pork chops in a bit of oil in a large cast iron skillet. Pour in 1/2 bottle of beer (Heinekin is nice) and two thinly sliced onions. Season with salt and pepper and a couple shakes of tabasco or other pepper sauce. Cover pan (foil is okay) and put into preheated 375F oven for an hour or so. Stir in one tablespoon mustard and cook another 15 minutes. UNcover and let onions finish caramelizing. To serve: Turn porkchop over on plate (brown shiny side up) and cover with gravy and onions. Done.
