Pork Chops with Honey, Sage and Hazelnuts

3 tablespoons clear honey
3 tablespoons chopped fresh sage
1 tablespoon chopped fresh parsley
1 tablespoon ground hazelnuts
1 tablespoon hazelnut oil
juice of 1/2 lemon
salt
pepper
4 good-sized pork chops

In a bowl mix the honey, herbs, nuts, oil, lemon juice and seasoning
(If the honey is thick, it should be slightly warmed.) Heat the
grill to its hottest and arrange the chops on a grill pan. Cook
them on one side and then turn over.

Spread the mixture across the uncooked side of the chops and replace
under the grill until the mixture caramelises.

If the chops are thick, finish cooking in a moderate oven for 10
minutes. Serve immediately, with new potatoes and a green salad.

Serves 4.
