Dixie Pork Chops
8 center cut pork chops (medium thickness) 1/2 tsp. salt 1/2 tsp. sage 4 cored tart apples, sliced into rings 1/4 cup brown sugar 2 Tbsp. flour 1 cup hot water 1 Tbsp. vinegar 1/2 cup seedless raisins
Brown the pork chops in small amount of fat in a skillet and sprinkle with salt and sage. Place in a casserole dish and top with the apple rings. Sprinkle with brown sugar. Add flour to the remaining fat in the skillet and blend. Add the water and vinegar and cook until thick, stirring constantly. Add the raisins to the vinegar mixture and then pour over chops. Bake in 350 degree oven for 1 hour.
Note: Best to bake with foil or lid and then remove toward the end of baking time to allow for browning. Keeps chops much more succulent this way.
