Souper Saucy Pork Chops

4 or 5 3/4" thick butterfly pork chops, cut in half
2 eggs
4 Tbsp water
1 1/2 cups seasoned bread crumbs
5 Tbsp oil
1/4 cup butter
8 ozs. mushrooms, sliced
1 can cream of chicken soup
8 ozs. sour cream
1/2 cup chicken broth

Beat egg and water together. Dip pork pieces in egg mix, then in
bread crumbs. Fry in oil until brown, 5 or so minutes per side.
Layer in a 13x9 pan. Melt butter and saute mushrooms. Add soup,
sour cream and broth. Pour over pork. Bake, covered, in a 325 oven
for 1 hour. This keeps very well in a warm oven afterwards - in
fact, it makes the meat even more tender!
