Thai Style Pork Balls With Peanut Sauce

INGREDIENTS: (Serves 2)
250g Minced Pork
2T Fresh Coriander Leaves, finely chopped
3 Cloves Garlic, finely chopped
1/4 cup Oil
1/2t minced chili
1/2t minced ginger
2T Crunchy Peanut Butter
1t Brown Sugar
1/2 cup Coconut Cream
1t Fresh Basil Leaves, finely chopped
METHOD:
1. Mix pork with half the coriander, half the garlic.Knead into a smooth consistency.
2. Shape into walnut sized balls.Heat oil and fry until golden, about 15 minutes.
3. Remove balls and oil and wipe pan clean, return 2T oil.
4. Cook remaining garlic with chili for 1 minute. Add remaining coriander, ginger, peanut butter, sugar and coconut cream.
5. Stir on moderate heat until sauce thickens.
6. Stir in chopped basil.
7. Arrange pork balls on a small bed of rice and pour sauce over!!
