I make Tonkatsu <pork cutlets> and we serve them in a bowl over rice with

the Tonkatsu sauce. They are really easy to make. about 1 pound of boneless pork chops 1 package Panko <japanese bread crumbs> 1 egg 1 cup flour <more if needed> several cups oil for frying. (I use peanut oil with a few dashes of Sesame oil) Cooked Sushi rice <4 cups cooked rice, 1tbs unseasoned rice vinegar, 2 tbs Mirin (sweet rice wine)> Keep the rice warm while making tonkatsu. Pound the cutlets so they are sort of flat. Dredge in flour, then egg, then panko. Let sit for about 15 mins. Heat oil to about 350 degrees, then deep- fry the cutlets. Drain excess oil from cutlets. Place rice in bowls. Place cutlets over rice. Serve with Tonkatsu sauce <I used bottled by kikkoman>. In my house, this serves 2. In yours, it might serve 3 or more. You can add a small salad made with bean sprouts and ponzu shoyu. Happy eating! Caron
