Portuguese Chicken
2 to 3 tablespoons olive oil 1 cup sliced scallions 2 cloves, garlic, crushed 1/8 tsp hot pepper sauce (more if you like it hot) 4 medium tomatoes, chopped 1 tablespoon cider vinegar 1 bay leaf 1/2 teaspoon ground cloves 1/2 teaspoon Worcestershire sauce 1/8 teaspoon saffron, optional 1/8 teaspoon freshly ground black pepper 4 chicken breasts, skinned, boned
In a large fry pan, heat oil. Brown scallions, about 3 minutes. Add garlic and hot pepper sauce cook 1 minute. Add tomatoes, vinegar, bay leaf, cloves, Worcestershire, saffron, and pepper. Bring to a boil then simmer, uncovered for 15 minutes. Place chicken on top of mixture, cover and simmer for 15 to 20 minutes, or until the chicken is done.
