Malasadas Portuguese Sweet Bread
1 pkg yeast 1/2 cup lukewarm water 2 tablespoons melted shortening 1/2 tsp lemon extract 1/4 cup water 1/2 tsp salt 1/8 tsp nutmeg 4 tablespoons dry milk 4 eggs 2 1/2 cups flour 4 tablespoons sugar
Dissolve yeast in lukewarm water. Sift flour. Combine dry ingredients. Beat eggs until thick adding 1 tablespoon sugar at a time. Add extract, water, yeast and shortening. Combine 2 mixtures. Let rise (about 2 hours).
Drop by teaspoon in deep fat heated to 375 and fry until golden brown. Drain and cool 5 minutes; roll gently in paper bag with sugar or powder sugar.
