Portuguese Orange Pudding

2 packets unflavored gelatin
juice of 2 oranges

4 cups milk
grated rind of 2 oranges
1 cup sugar

12 egg yolks
12 egg whites
6 T confectioner's sugar

Dissolve gelatin in orange juice. Heat milk on stove. When milk
is hot, add grated orange rind, sugar and oj/gelatin mixture.
Stir.

Beat egg yolks in a bowl. Slowly whisk in 1 cup of hot milk mixture,
then slowly whisk yolks into milk mixture. Let it heat 20 minutes,
stirring constantly. Cool.

Whip the egg whites, gradually adding confectioner's sugar.

Fold the egg whites into the milk mixture, put it all in a bowl,
cover and refrigerate overnight.
