Chicken a la King 2 Tbsp butter 1/2 green pepper, shredded 1 cup mushrooms, sliced thin 2 Tbsp flour 1/2 tsp salt 1 pint cream 3 cups chicken meat, cut in pieces 1/4 cup butter, melted 3 egg yolks 1 tsp onion juice 1 Tbsp lemon juice 1/2 tsp paprika sherry to taste shredded pimiento garnish Toast triangles Melt 2 Tbsp butter, add green pepper and mushrooms, cook 5 minutes. Add the 2 Tbsp flour and salt, cook until frothy and add the cream, and stir until sauce thickens.
Put all this in a double boiler on stove, add the chicken and let stand to get very hot.
In the meantime, take 1/4 cup butter and beat together with the egg yolks, onion juice, lemon juice and paprika. Stir together until the eggs thicken a little, combine with the mixture in the double boiler, and add a little sherry and shredded pimiento before serving on toast.
