Apricot Chicken

1/4 cup red wine
1/4 cup red wine vinegar
1 cup dried apricots
2 1/2 to 3 pounds chicken pieces
1 chopped onion
1 tablespoon cornstarch
2 tablespoons of water

Combine red wine and red wine vinegar. Soak dried apricots in
this while you brown chicken pieces. Remove chicken, leaving pan
drippings. Saute chopped onion until tender. Return chicken to
pan. Add apricot mixture. Bring to boil. Lower heat and cover,
cooking chicken until tender (about 20 minutes). Remove chicken.
Add a tablespoon of cornstarch to a couple tablespoons of water
and add to apricot mixture. Stir to thicken. Pour over chicken.
Delicious with rice pilaf.
