Arroz con Pollo
1/4 cup finely chopped onion 1/4 cup finely chopped green bell pepper 1/4 cup seeded and finely chopped tomato 2 tsp olive or vegetable oil 2 garlic cloves, minced 1-1/2 cups water 1 packet instant chicken broth and seasoning mix 1 tsp rinsed drained capers 3 large pimento-stuffed green olives, cut into halves 1/2 cup uncooked long-grain rice 2 chicken breasts, skinned 1 tsp chopped fresh parsley or cilantro 1/8 tsp pepper 1/8 tsp ground cumin
In a large skillet, saute onion, bell pepper, tomato and garlic in oil until softened. Add water, broth mix, capers and olives until mixture comes to a boil. Stir in rice and cover. When rice is about half done, add chicken and seasonings. Cook until chicken is tender and rice is cooked. Adjust seasonings. Serves 2.
