SAUTEED CHICKEN WITH ARTICHOKES
4 boned and skinned chicken breast halves salt and pepper 2/3 cup chicken broth 1 teaspoon olive oil 1 can artichokes, rinsed and drained 2 Tablespoons drained capers 1/2 teasp dired oregano 2 Tablespoons chopped parsley Lemon wedges Rinse chicken and dry. sprinkle with salt and pepper, place each half between sheets of plastc wrap , pound lightly till 1/4 inch thick. Peel off plastic.
Put oil in pan, heat add chicken in single layer when hot. Cook till edges turn white, turn over and cook a few few minutes till no longer pink inside. 3-4 minutes total, transfer chicken to plate to keep warm after it is cooked.
Add the other ingredients to pan, scraping up the browned bits, cook till mixture boils, stir in parsley, pour over chicken and serve. Garnish with lemon.
