Chicken with Bacon Twist (Serves 2)
4 6-oz boneless chicken breasts 8 slices of lean bacon 1 small green bell pepper 4 slices of red onion French mustard dark virgin olive oil soy sauce garlic powder Goya Adobo All Purpose seasoning with pepper
Preheat the oven to 350. Wash and pat dry the breast. Brush the breast with olive oil, followed by the mustard. Season with garlic powder and the all purpose seasoning. Wrap each breast in two strips of bacon. Bake for 20 minutes.
Top breasts with green bell peppers and red onions. Add soy sauce to taste. Bake until tender. Serve with green vegetables and rice if you prefer.
