BAKED PHEASANT

1 pheasant, cut into pieces
2 apples
2 potatoes
4 to 5 stalks celery
2 onions
2 oranges
4 carrots
salt and pepper
vegetable oil
flour (to roll meat in, for browning)

Cut all fruit and vegetables into pieces and mix together in roaster.
Cover with water, enough to come even to top of vegetables. Place
pieces of pheasant that were browned in oil, on top and bake at
350 degrees until tender. Bake in covered pan. Chicken can be used
in place of pheasant.
